- Ponemos a calentar una cacerola con un poco de aceite y agregamos la cebolla y la acitronamos hasta que cambie de color.
- Colocar en la licuadora los jitomates, dos dientes de ajo pelados y 1/4 de taza de agua.

- Licuar.
- Agregar la mezcla en la cacerola junto con la cebolla acitronada y dejamos hervir durante 3 minutos.
- Agregamos los granos de elote al caldillo de jitomate, nos vamos a dar cuenta que está comenzando a cocinarse porque nuestro caldillo es de color rojo intenso. En éste punto vamos a sazonar nuestro caldillo con un poco de sal al gusto.

- Dejamos hervir durante 5 minutos y agregamos las calabacitas, y las dos armas de epazote previamente lavadas, mezclar y dejar hervir de 8 a 10 minutos.
- Agregamos la carne que previamente cocimos y dejamos hervir unos 3 minutos. Retiramos del fuego.
- Servimos y agregamos crema y queso panela rallado o queso crema en boronas.
